For you, my pumpkin spice latte recipe!
2 1/4 cups organic soy milk
1/4 cup espresso
2 1/2 tablespoons organic pumpkin puree
1/4 to 1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1 tablespoon vanilla
Combine the pumpkin puree, vanilla and spices in a small saucepan. Whisk in the milk and espresso and bring to a simmer over medium-high heat. Pour into two mugs and top with more nutmeg.
Sugar and whipped cream are optional.
Is a very good drink to accompany with Almond Cantuccini.
